Each Shun knife is designed with the worlds finest materials to compete with the most expensive knives on todays market. CEO Koji Endo, head of Japan's largest blade producer, leads the Shun knife project out of Seki City, Japan.
Shun knives are sharpened to a precise 16 angle on each side of the blade. For comparisons sake, German blades are generally sharpened to 22. The premium-quality SG2 and VG10 used in the cutting core of Shun knives provides a razor sharp edge, which makes them last an incredibly long time before resharpening is needed. Made with VG10, which is a type of stainless steel that is exceptionally dense. This allows the steel to be tempered to a Rockwell hardness of 61, yet still have enough flexibility and strength to take and keep a perfect edge. Every Shun Knife comes with a lifetime free sharpening and a lifetime guarantee.
