Oyanagi Bonita Shaver (Katsubako)
The Jikko Bonito Shaver is the most common tool for flaking dried bonito fish. This Jikko Shaver is made in Japan and is not only the largest model bonito shaver on the market, but also one of the most well crafted. The dried Bonito flakes are a very popular and trending ingredient in both Dashi (clear broth soup) and as a garnish on top of sushi rolls. An essence of Japanese cooking is freshness, this is why we suggest freshly flaked Bonito as opposed to pre-bagged flakes. This product is suitable for both individual and restaurant use.

Traditional Japanese Makisu Mat
This Makisu Mat is made, solely by hand, by 5th generation Rattan Blind Makers in Tokyo. Most comparable mats on the market today are machine made, disregarding the natural stream of the fibers, this causes large crooks in the small bamboo sticks sometimes rendering the product useless. The Makisu Mat has its bamboo material hand split by a hatchet. Next, skilled laborers weave the bamboo together by hand arranging the sticks in the natural pattern of the bamboo. The finished product is a more durable sushi mat as the hand split bamboo is split along the fiber. To clean simply wash with warm water and hang to dry.
