This large flattening stone comes with rubber feet and is designed to be laid flat in a sink bottom while you hold the stone and run it across the flattener. Extra coarse for fast cutting. We use these because of the high volume of hand sharpening. This cuts quickly, but can leave fine grooves in the higher grit stones, which should be smoothed with your dressing stone. For persons doing a more normal volume of sharpening, the large 220 grit provides the benefit of truer flat without the grooving, it just takes longer. (Most flattening stones are around 220 grit)

| Naniwa Large 220 Grit Flattening Stone
Sharpening stones must be kept flat for peak performance, particularly when sharpening traditional Japanese knives. This is a very large flattening stone with rubber feet to provide firm traction on the bottom of your sink or slop trough. Press the stone onto the flattener and use a figure eight motion. You can get a truer surface than with a small flattening stone.

| Naniwa Cleaning/Dressing Stone
This small hand-held stone is used for cleaning metal fragments, creating slurry and flattening small flaws. The higher grit stones (5000 and above) really benefit from a cleaning stone. Higher grit stones have a harder bonding agent which causes the abrasives to release more slowly and to be more prone to "loading up" or collecting metal particulate. We recommended that you use a cleaning stone for these high grits. Splash and go, no soaking needed.

| Naniwa Stone Holder (Toishi Dai)
The Naniwa Stone Holder secures your stone while sharpening or flattening. It has good traction with the rubber mounts and sufficient weight to keep from moving around. Holds stones from 5.5 to 9 inches in length.
This is good quality stainless steel that won't rust out on you. We tested one leaving it in the water overnight and pulling it out in the daytime as we used it. Other models rusted on us within days. The Naniwa never rusted after two months, and the screw downs still move smoothly. Now, these shouldn't be left in the water and we're not suggesting that. But if it gets accidentally left in the soak tank, it's not going to be a problem.

The Naniwa sink bridge is great for creating a stress-free environment when sharpening your knives and flattening your stones. Constructed of sturdy, high-grade stainless steel that won't rust under constant exposure to water. Adjustable to fit sinks from 15-3/4" to 22" wide and holds stones from 8 to 9-7/8 inches long, in terms of the rear stop. For our in-house sharpening, we just use a non-skid pad and forego the use of the rear stop. Ideally, you would set a stone holder right on top of the sink bridge.

Naniwa Multi Stone 1000/3000 Grit. This reliable Naniwa 1000/3000 is a great starter stone for someone with no stone collection at all. The 1,000 (Red) for setting an edge and creating a burr, and the 3,000 (Yellow) for smoothing and polishing the edge. The high amount of bonding agent used in this stone is typical of Japanese made waterstones, so they will last, however the price is much more digestible than comparable stones from Japan.

Naniwa "Super Stones" require no soaking, just splash and go. The 1000 grit stone is used for establishing an edge on a dull knife. It will remove micro-pitting but any chips will require a more coarse stone. This is the average size used for sharpening a dull knife. For use on meats, you may want to continue sharpening with a higher grit but will work great on vegetables.

Naniwa "SuperStones" require no soaking, just splash and go.
The Naniwa 12,000 Grit Super Stone is used as the final stage of sharpening. Generally speaking, a stone with this high grit is used with Traditional Japanese knives for polishing the shinogi line and edge. Many chefs will also increase the angle a couple degrees to put a very fine micro-bevel with this stone. Naniwa dressing stone is recommended to create slurry and clean particles that embed in high grit stones.
