The ST-1700 Hard Chrome Steel Rod from master grade is a fine cut honing rod.
The features that make a high quality sharpening steel are:
1) How the grooves are machined. The shoulders of the grooves nicely squared from using quality cutting dies and machined slowly enough to not burr.
2) How hard is the steel: It must be harder than the knife, and at 65 Rockwell, this MasterGrade rod is extremely tough. There are very few knives which are harder, and for these we recommend a ceramic honing rod. The vast majority of kitchen knives are in the range of 54 to 61 Rockwell.
3) Number of lines or pattern: With 500 grooves, this fine cut rod is suitable for either German or Japanese cutlery.
4) The Handle: Many high quality sharpening steels have a metal finger guard, this one is hard plastic. When using a rod, you can occassionally hit the finger guard. We prefer that the knife win this battle. You're not going to actually cut through this finger guard, but it will not nick your knife.

The MasterGrade 11 in Black Ceramic Honing Rod comes in at 8 mohs of hardness. Great for every knife brand, it features a metal core and rubber tip, giving it a better chance to survive a fall. This honing rod includes a square bolster, making it unlikely to roll off a counter or table.
Features:
Two grooved sides on opposite sides of the rod. To get a more aggressive hone, use the side with the lines. For a finer hone, use the side without the lines.

The Master Grade ST-3700 receives our top recommendation for a ceramic honing rod.
Please note that a steel honing rod is used to straighten the edge of a knife that has "burred" or rolled over. Ceramic rods are used to remove metal and restore an edge. Knives with a Rockwell hardness of 61 or greater tend to not roll the edges, but will abrade and dull. Ceramic may be the best choice for these knives.
Not all ceramics are equal: At 9 mohs of hardness, the Master Grade ST-3700 is significantly better than others. (Diamonds are 10 mohs). The vast majority of ceramic rods on the market are 8 mohs.
Impact Resistant. Handle is square, so less likely to roll off the table. Rubber tip and metal core also help to make this rod more likely to survive a fall.
Level of abrasiveness is anecdotal as we have no specific unit of measurement. Roughly equivalent to a 3000 grit stone.

| Master Grade Commercial Electric Knife Sharpener
Of all the electric sharpeners on the market, this comes closest to mimicking a professional machine without having to spend a few thousand dollars. It utilizes industrial grade sandpaper wheels with a soft foam backing that are good for over a thousand sharpenings. With these wheels, if you use light pressure the belts tend to follow the original bevel set by the manufacturer. If you prefer to change the bevel, just use a little force, and the wheels will grind to the angle at which you are holding the knife. This is a powerful motor that won't get hot after sharpening 6 or 7 knives. The machine doesn't remove any more metal than is necessary. The only negative comment that I have about this machine is that it's a bit loud. They are currently in use in many restaurants, butcher shops, and the British Navy has them mounted on the galley wall of many of their warships.
