| Dexter Russell 6 in. Flexible Boning Knife (Carbon Steel)
This knife is made by Dexter Russell specifically for use in pork butts and is marketed as a ham boning knife. While it obviously has many uses as a boning knife, the reason that it excels at removing the difficult pelvic bone from a ham is the flex and durability of the steel. The carbon steel is able to get a nice springiness that comes back to shape even when pressed hard against the flat bone. Carbon steel is also very easy to sharpen and can obtain very keen edge due to the tight grain structure. The handle is raw wood for a firm grip even when your knife hand becomes oily.
Carbon knives can rust if not dried properly after use. If that happens just rub it with a little Bar Keepers Friend (sold with Ajax and Comet at the grocery store) and the rust will come clean.

There are two boning knives available in Wusthof Classic. This 5 inch model is stiff, and the 6 inch which is flexible. I find it easier to keep an edge on the stiff boning knives, whereas the flexible knives work better for filleting fish and tasks where a little give in the blade is desirable. In general, these knives are used for de-boning chicken or ham, trimming fat and sinew. The tapered, pointed blade is a necessity for working closely around joints.
