This knife is very versatile in that it has decent flex to it, which makes it really good for removing skin from fish filets. I would also use this knife for breaking down whole fish. Particulary for soft flesh species like Salmonids. Of course it's great for barrons of beef, hams and the usual slicer requirements. But this knife in particular can replace two knives. I would use this instead of a break knife or scimitar (for fish) also as a meat slicer. It can perform both functions extremely well.
