Shun knives are sharpened to a precise 16° angle on each side of the blade. For comparison’s sake, German blades are generally sharpened to 22°. The premium-quality SG2 and VG10 used in the cutting core of Shun knives provides a razor sharp edge, which makes them last an incredibly long time before resharpening is needed. Made with VG10, which is a type of stainless steel that is exceptionally dense. This allows the steel to be tempered to a Rockwell hardness of 61, yet still have enough flexibility and strength to take and keep a perfect edge. Features a VG2 Japanese steel cutting core with 32 layers of stainless steel and copper cladding, instead of Shun's traditional stainless steel Damascus cladding. Copper ribbons shimmer over the blade's surface, and are set off by copper accents at the bolster and endcap. The endcap features commemorative laser engraving, and each knife is numbered sequentially.

Shun Classic Knives
The wavy pattern on Shun blades is called a Damascus look; what gives it that pattern are 16 layers of SUS410 High Carbon Stainless Steel, on each side of a VG10 core. This combination of materials gives the blade strength, stain resistance, and incredible cutting performance.

Shun Classic Left Handed Knives
have a "D" shaped handle, it is designed to contour into the joints on your fingers for a firm, comfortable grip. On the left handed version of these knives, the lobe, or protrusion in the handle is on the opposite side to comfortably fit a southpaw grip.

Shun Premier Knives
have a hand-hammered finish (Tsuchime, that provides air pockets to reduce drag when cutting and helps to keep starchy foods from sticking to the blade. The handle is a dark, walnut Pakka Wood. The steel is a VG10 core clad with 16 layers of Damascus on each side for a total of 33 layers.

Shun Classic Pro Knives
are single-bevel blades that deliver perfect. The graffiti etched blade is made with high carbon VG10 steel. Premium D-shaped Pakka Wood handles nestle comfortably into the curves of the palm. The wide Shinogi (or blade bevel) makes it easy to sharpen these knives on a whetstone.
