Shun Pro Sho

Classic Japanese single-bevel blades deliver perfect precision in the Shun Pro line.  The beautiful graffiti etched blade is made with high carbon VG10 steel, which takes and holds o incredibly sharp edge longer than comparable knives. Premium D-shaped PakkaWood handles nestle comfortably into the curves o the palm, offering control and a secure grip. The wide Shinogi (or blade bevel) makes it easy to sharpen these knives on a whetstone.

Shun Classic Alton's Angles

The unique 10° angle on our new line of Shun knives is the result of the collaboration between Kershaw's own blade smiths and star of the Food Network's Good Eats show, celebrity chef Alton Brown.

Alton loved the sheep's foot blade shape on the Shun Vegetable Knife, but had trouble using it because his knuckles kept hitting the cutting board. So he asked Kershaw for a modification - a small angle that would let him both firmly grasp the knife and fully contact the cutting board.

It worked. In fact, it worked so well that now here are a half-dozen Alton's Angles blades. Not only does the design keep knuckles off the cutting board, but the natural curve created between the two-sided edge blade and the user's arm also makes controlling the blade even easier and more precise.

Shun Pro 2

Now Laurent Gras has been even more Shun Pro knives to love. The Shun Pro2 series offers top-of-the-line Shun Pro performance combined with an opulent new design and super-premium materials. Shun Pro 2 blades feature a unique dual polish. The top of the blade is polished to a brilliant mirror finish while the blade bevel is satin polished for fast and easy sharpening. These high performance blades are paired with premium PakkaWood handles. The Shun Pro2 series features comfortable asymmetrical handle design, which is slightly rounded at the center. The handles are accented with a brass medallion, as well as brass rings and mirror-polished bolsters and end caps.

Shun Elite

The new Shun Elite Series offers stunningly beautiful design and unparallel performance. The secret is in the advanced steel used to create these attractive blades. The two-sided blade begins with a cutting core of SG-2, an exotic Japanese powdered steel. The advantage of powdered steel is that every element used to create the steel is evenly blended, eliminating weak spots or imperfections. The high density and ideal grain structure of the resulting SG-2 allows us to temper it to an extremely high hardness (64-66 on the Rockwell scale) for an exceedingly sharp, smooth, and durable edge. Next, each Shun Elite knife is clad with tow layers of SUS410 steel, a softer stainless steel that provides additional strength, flexibility, and corrosion resistance. All of this technology means Shun Elite blades will stay sharp several times longer than comparable cutlery, while providing the flexibility and cutting performance top chefs demand.

Shun Premier

We are pleased to introduce Shun's newest and best looking line of cutlery, SHUN PREMIER.  The hand-hammered finish (Tsuchime) is a great melding of form and function.  The mottled surface provides air pockets to reduce drag when cutting and helps to keep starchy foods from sticking to the blade.  The handle is a dark, walnut PakkaWood;  A resin impregnated wood that is impervious to water and will not shrink.  The steel is a VG10 core clad with 16 layers of Damascus on each side for a total of 33 layers.  The edges are razor sharp and very thin, as you would expect from Shun.  Lifetime guaranteed and free factory resharpening.
