If you are enrolled in Chef Baum's Basic Skill Class, you are required to have one full knife kit to complete the course.
Basic Kits: The Southwestern College Basic kit comes with Forschner by Victorinox knives. These knives are designed for industry professionals, particularly meat and poultry processors. The steel is softer than a forged knife, can be easily sharpened, and to a very keen edge. In the industry, this is considered a five year knife. Meaning that after many sharpenings, the blade becomes small and thick and should be replaced. Choose between an 8 or 10 inch Chef Knife.
Recommended Kits: The Southwestern College Recommended kit upgrades the three knives featured in the Basic Kit from Forschner to Mercer Genesis. Each Mercer Genesis knife is a drop-forged piece of high carbon German stainless steel that has been constructed in Taiwan. It is an excellent knife and should easily last fifteen years. It is harder than a stamped knife, somewhat harder to sharpen but retains the edge much longer. Choose between an 8 or 10 inch Chef Knife.
Premium Kits: Upgrade all knives to Messermeister Meridian Elite, a premium German knife. There are several distinct advantages to this brand. The bolster has been modified away from the edge of the blade. This makes for much easier sharpening. The angle of the bevel is set at 17 degrees, as opposed to the traditional 22. All additional items are discounted specifically for Southwestern Students. Although they are useful, they are not required.
