If you're like most people, you've baked cookies on a jelly roll pan for years and never knew there was a different pan for this purpose. A true "cookie sheet" pan is considerably thicker than a jelly roll pan and doesn't have the high sides. I have baked the same batch of dough side-by-side on a cookie pan and a jelly roll pan, and there is a significant difference in the result. There is much more consistent browning on a cookie tray, and the lack of sides makes it easier to use your spatula when removing cookies.
