Comment: I recently ordered two Glestain Gyutos, a 10 1/2" & a 9 1/2". The 10" was pretty dull right out of the box, the 9" very sharp. Both are now sharp and a pleasure to use.

Comment: I have been using Glestain Gyuto's for 10 years. It is a great knife - awesomely sharp, great food release, excellent balance, and beautiful.

Comment: Excellent all round knives, Well design for look and preformance. Well balance, very solid build quality. Can take a decent edge after sharpening and holds much better then tridents. Their signature scallope edge is by far more functional than any other scallop edge knife that I have ever used, not just for looks. Matches the preformance of carbon steel knives but as easy to mantain as stainless. however still lacks the solid crisp feel of carbon steel or folded steel like kasumi.
