The Shun Blue Steel 6 in. Sakabone was designed by award winning Chef Chris Consentino. The sakabone is a traditional Japanese boning knife with a thick blade, and is used for poultry, fish and other meats.

All of the knives in the Shun Blue series are truly unique. The carbon core of the Shun Blue Kiritsuke is Hitachi blue carbon steel clad in stainless steel. A pure carbon steel knife will patina, and with this design, it creates a beautiful combination of high polished stainless steel contrasting against the exposed core. You may expect the edge to take on a bluish hue. Like any carbon steel knife, each Shun Blue knife should be dried thoroughly after each use.
