"S-1" Series Hand Made Honyaki Knives The company Nenox is among the precious 5% that still produce knifes using the Honyaki method. Honyaki is the long laborious process of hammer shaping or hand forging and water tempering a knife. The Honyaki process of hammering a knife into shape removes many of the impurities creating harder steel with wonderful edge retention. The knives listed below are from the "S-1" series, Nenox's superior line. The handles are high polished quince burl wood. We believe that we have the best prices on these knives. Savuer magazine rates Nenox S-1 the finest knives made. Nenox's fine elegant workmanship was not intended to make the knife indestructible. Subjecting a Nenox to the rigorous abuse of a commercial kitchen would be like using a Bentley as an off road vehicle in a very rough terrain. “S-D" Series Hand Made Honyaki Knives, utilize the same steel and construction techniques as the S-1 knives. The handle on this series is made of Dupont-Corian for extreme durability, ease of sanitation and high shine. Scabbards are now available on most models.
